My theme for Valentines this year is strawberry and coconut and expect to see some tantalizing new bakes here soon and one made especially for Brilliant Baking Magazine which we will feature on Mid Morning Show in time for Valentine baking.

Today simplicity, taking advantage of the freshness of Mediterranean ingredients, and combining flavors in a way that no cooking is needing with amazing results. Too much focus these days goes on food styling with flavors often forgotten. Fresh gbejna come immersed in water in sealed packs. They have a short shelf life but it is a most wonderful and versatile product that can be used in both savory and sweet dishes. For today’s recipe you will need per portion:

1 fresh soft gbejna
2 strawberries
1 spoon honey
1/2 teaspoon Grated rind orange
Some lightly toasted coconut flakes (tossed in a hot pan for a minute or so)
